Today's Tip: November Recipe #4 - Spicy Sweet Potatoes!

Growing up I did NOT like sweet potatoes.  My only experience with them was at Thanksgiving where they came in a casserole dish with gooey marshmallows on top and I was not a fan.  Fast forward a number of years (I won't say how many!) and now I am a huge sweet potato fan because I discovered that sweet potatoes can also be made spicy.  I'm sharing two of my favorite ways to fix sweet potatoes - try these and see what you think!



Sweet Potato Fries

6 large sweet potatoes, peeled and sliced like steak fries
2 t kosher salt
¼ packet taco seasoning mix

Preheat oven to 425 degrees.

In a large mixing bowl, drizzle olive oil over potatoes and toss to coat.  Add salt and taco seasoning mix and toss.  Place fries in one even layer onto a baking sheet.  Bake in batches if necessary.

Place into over for 10 minutes then flip them over.  Cook 10 more minutes.  They should be soft on the inside and browned on the outside.  Let cool 5 minutes before serving.



 
Spicy Sweet Potatoes


8 servings; Prep: 10 min. Bake 40 min.

Ingredients:

3 large sweet potatoes, peeled and cut into 1-2" cubes (about 6 cups)
2 tablespoons olive or grapeseed oil
2 tablespoons brown sugar
1 teaspoon chili powder
½ teaspoon sea salt
¼ teaspoon cayenne pepper

Directions:

In a large bowl, combine sweet potatoes and oil.  Add remaining ingredients; toss to coat.
Transfer to a greased 11”x7” baking dish.  Bake, uncovered, at 400 for 40-45 minutes or until potatoes are tender, stirring every 15 minutes.

Nutrition Facts: 149 calories, 4 g fat, 0 mg cholesterol, 164 mg sodium, 28 g carbohydrate, 3 g fiber, 2 g protein.
